Ingredients: 5 cups flour, 1/4 to 1/2 cup chopped peanuts, 1/2 teaspoon baking soda, 1 egg slightly beaten, 1/4 cup vegetable oil, 1 1/2 cups pureed bananas, 2 teaspoons vanilla extract,
Water
Instructions: Preheat your oven to 325 degree F and get a few non-greased baking sheets. Stir all ingredients except the water in a large mixing bowl until they are blended and slightly lumpy. Gradually add the water one tablespoon at a time until it forms a stiff dough. Use a food processor to thoroughly mix. For a large dog make 2 logs from the dough each about 3 inches high. Place each log on a separate cooking sheet and flatten to a width of about 5 inches or so. Let the biscotti bake for about a half an hour. Remove them from your oven and place them on a cutting board. Let them cool for about 10 minutes and then cut the logs into ½ inch pieces. Put them back into the oven and let them cook for another 20 minutes. Let them cool and then serve!.
